Elder Care Tips: Starting Your Day with a Carb-Free Breakfast

While it is common to skip breakfast, making sure that you and your seniors get a great start to your day with good nutrition ensures a healthier, stronger body, and more energy to get through whatever the day holds for you.
According to many experts, a carb-free breakfast is the way to go. Eating carb-free in the morning can rev up your metabolism and stabilize your blood sugar levels so you can control your appetite throughout the day and avoid the dreaded afternoon crash.

Omelet with Goat Cheese and Herbs
Whisk together three eggs, a tablespoon of chopped parsley, basil or cilantro, 1/2 a teaspoon of salt and 1/8 of a teaspoon of pepper. Melt a tablespoon of unsalted butter in a small nonstick skillet and when it’s hot, add the eggs. Cook until just set, which should be around 3 minutes. Crumble goat cheese over the eggs and fold in half, cooking until the cheese is melted.
Preheat the oven to 400 degrees and take out a large mixing bowl. Mix together 6 large egg yolks, 1/4 cup of fresh chopped chives, a teaspoon of kosher salt and a teaspoon of black pepper and whisk. In a separate bowl, beat the egg whites with an electric mixer on medium high until a stiff peak forms. Use a spatula to fold the whites into the yolk. Melt a tablespoon of butter in a large nonstick skillet on medium low heat and coat the sides. Add the egg mix to the skillet and crumble 4 ounces of goat cheese over the top. Bake for 10 minutes and remove from the oven. Cut into wedges and divide the soufflé, a bag of salad greens and 1/2 a pint of halved grape tomatoes on the plates. Drizzle the greens in olive oil and serve with a slice of lemon.
Steak and Eggs with Seared Tomatoes
Heat 1 tablespoon of olive oil in a large skillet on medium high heat. Season 1 pound of flank steak with 1/2 a teaspoon of salt and 1/4 teaspoon of pepper. Once hot, put the steak on the skillet, cooking for 4 to 5 minutes per side until medium rare. Remove from skillet and let sit for 5 minutes. Add tomatoes to the skillet by cutting four medium tomatoes in half and cooking cut side down until browned. Add a teaspoon of olive oil in a small nonstick skillet and once hot, crack 4 large eggs in. Cook covered for 3 minutes for slightly runny sunny side up eggs. Sprinkle the eggs and tomatoes with 1 tablespoon of fresh oregano and 1/8 teaspoon of salt and pepper. Slice the steak into strips and serve 3 strips to a plate with two tomatoes and one egg.
